Honey-Mustard Glazed Salmon

This is the perfect recipe for two or to feed a crowd. The salmon is served with lemony asparagus to complement—be prepared to make extra because everyone will be wanting more.

Prep time: 15 minutes Cook time: 20 minutes

FOR THE SALMON

2 tablespoons whole grain mustard

1 tablespoon brown sugar

1 teaspoon honey

½ teaspoon kosher salt

½ teaspoon freshly ground black pepper

Two 6-ounce salmon fillets, skin-on, bones removed

FOR THE ASPARAGUS

2 tablespoons olive oil

1 bunch asparagus, woody ends removed

1 pint cherry tomatoes, halved

½ lemon, zested and juiced

½ teaspoon kosher salt

¼ teaspoon freshly ground black pepper

To make the salmon: Preheat the oven to 450ºF. Line a baking sheet with foil. Whisk together the mustard, brown sugar, and honey in a small bowl. Season with salt and pepper. Place the salmon fillets on the prepared baking sheet and brush with the glaze. Place in the oven and bake until the salmon is opaque and flaky and the glaze has slightly caramelized, 10 to 15 minutes. Brush with more glaze halfway through cooking, if necessary. Remove from the oven and serve with the asparagus.

To make the asparagus: Heat the olive oil in a large sauté pan or cast-iron skillet over medium-high heat. Add the asparagus and tomatoes and cook until almost tender but still crisp, about 5 minutes. Add the lemon zest and juice, season with salt and pepper, and toss. Cook an additional minute and serve with the salmon.
